Burgos is a Gothic spire piercing a grey Castilian sky. It is a serious city, cold and windy, where the people are reserved but noble. The Cathedral is the absolute monarch here—it is the only cathedral in Spain that is a UNESCO site in its own right (not just part of a city). The spires look like stone lace.

It smells of wood fires and Morcilla de Burgos (black pudding with rice). The food is hearty to combat the cold: roast lamb, bean stews, and heavy red wines from the nearby Ribera del Duero. It is the city of El Cid, the medieval hero.

Burgos is green and leafy, with the Arlanzón river cutting through it. To enjoy it, bundle up, walk the Paseo del Espolón under the plane trees, and eat the blood sausage. It’s better than it sounds.
